Alas, “Chicken Noodle Soup”, it would seem that this simple dish could never amount to such great applications such as: ailments, remedies, and just plain old “Good eating’. However, Chicken noodle soup may serve as a remedy for the broken soul; including a broken heart, as well as a remedy for a variety of ailments including the common cold. Chicken Satay with peanut sauce

Ingredients for Satay

Chicken breast – pieces in long strips, Five Hundred grams (Boneless)

Soy sauce- One tablespoon

Lemon juice- One tablespoon

Chilli powder- One teaspoon

Salt- one pinch

Ingredients for Peanut Sauce

Peanut Sauce Recipe

Ginger garlic paste- One tablespoon

Onion (chopped finely) – One small

Peanut butter (I used smooth one, but crunchy one will also do)- Two tablespoon

Coconut milk- Four tablespoon

Soy sauce- One tablespoon

Lemon juice- One tablespoon

Salt- a pinch

Recipe:-

Firstly, the following ingredients need to be combined properly in a mixing utensil or a bowl: Lemon juice, Soy sauce, Salt, Oil and Chilli powder. After the above mention ingredients are properly mixed, it should be left to marinate for some time (approximately 1 hour), in the refrigerator. After an hour of leaving it in the refrigerator, take this mixture and apply it all over the chicken properly. Now, take these marinated chicken trips and insert it one after the other in preferably a wooden skewer. Now, take a pan and put it on medium heat. Put some oil on the pan and let it get heated properly on high heat time. Now carefully place the skewers on the pan(on high heat). The skewers needs to be turned time to time so that the chicken it evenly coocked from all the sides. If there’s any extra marinated mix left that can be used on the chicken at this time.

Recipe for Peanut Sauce:

For this sauce, take a small amount of oil on a pan and heat it. Now, add onions until it sauté properly. Now add the ginger garlic paste and let it be cooked for 1 minute or so. Remember to mix and stir these ingredients while it’s been cooked. To this mixture add peanut butter, 2 tbsp of water and soy sauce while stirring so that it is mixed properly. After it is mixed properly, add salt, lemon juice and some coconut milk and again mix properly. Your peanut sauce is now ready!

It should be served with the hot satay.

Some extremely useful tips:-

  • If skewers are not available then, small size of chicken strips can be used along with toothpics.
  • For avoiding the charring action on the skewers, it can be dipped in ice cold water before the chicken are being threaded to it.
  • If you’re the one who’d like spicy peanut sauce, then, red chillies should be added along with the ginger garlic paste and cooked.
  • If coconut milk is not available, then, good quality coconut powder can be added to milk and then it can be used.

Recipe for Italian Baked Chicken and Pasta (Pastina)

Recipe for list of ingredients needed are as follows:-

Pastina pasta- One bowl
Olive oil- Two tablespoons
Chicken breast (one-inch cubes)- Half cup (cubed)
Onion, diced (about half a cramped onion)- Half cup
Clove garlic, minced- One
Tomatoes with juice- One (14.5-ounce) can be diced
Shredded mozzarella- One cup
Fresh flat-leaf parsley- Quarter cup chopped
Kosher salt- Quarter teaspoon
Quarter teaspoon freshly ground black pepper
Bread crumbs- Quarter cup
Parmesan cheese- Quarter cup grated
Butter- One tablespoon, plus more for buttering the baking dish

Follow the following steps for the preparation of the dish once the ingredients are in place:-

1.)Firstly the oven should be preheated to 400 degrees Fahrenheit.
2.)Get an average size of bowl of salt water and boil it at a high heat.

3.)Now put the pasta and cook until just supple, stirring infrequently, approximately 5 minutes of time. Now transfer the pasta into a large size of mixing utensil for the purpose of mixing.
4.)Simultaneously, put the olive oil in an average size of pan that can be used for sauté on a medium heat. Now add the chicken and cook for about 3 minutes of time.

5.)Now add to this chicken the onions and garlic taken in the ingredients, occasionally keep stirring to so that all the ingredients mix up properly in the pan, and let it cook till the time onions are tender and also the chicken is cooked properly through and let it cook for about 5 minutes more.

6.)Now, to the bowl of the pasta which is cooked properly put in the mixture of chicken we just prepared. After this step the following ingredients are to be added namely mozzarella cheese, parsley, pepper, salt and canned tomatoes.

7.)All the ingredients which are recently added takes a little time and proper stirring to mxi and combine equally, hence, it should be properly mixed.

8.)Now this mixture is then placed in a baking dish having size approximately equal to 8x8x2 inch in length, width and height. After this step is completed take a small size bowl and put the parmesan cheese along with bread crumbs and mix it.

9.)This should be spread on the mixture of pasta as garnishing. The upper layer can be garnished by small pieces of butter.

10.)Put it in the oven and bake it for about thirty minutes until it’s golden brown.

PREPARATION

  • Place a frying pan on the flame.
  • Now pour the butter and olive oil on the heated pan and let it melt and form a brownish mixture.
  • Add the chopped onions and garlic in to the pan.
  • Saute them until the mixture turns golden brown and add garlic powder.
  • Now carefully add the chicken thighs to the pan, simmer the flame and let it cook for over 20 minutes. Form the chicken in to a patty form.
  • Now add the parsley and rosemary leaves and mix them properly.
  • Leave the dish for ten minutes on the flame.
